Cheeseburger Sliders

I always like to try out what I call "school night dinners" during the summer to up my repertoire of meals that are quick, minimal cleanup, and that all of my kids will be excited about.  These sliders were all of those things PLUS they're something my kids can make start-to-finish on their own which is a bonus.

Bang Bang Chicken Skewers

I came across this recipe on IG and decided to give it a go and MY WORD it is so so so good.  We've made it once a week for at least a month and had my parents over this week and grilled them for them as well.  The leftovers are equally tasty and you may want to drink the sauce!

Carne Asada

We were craving some fajitas a couple of weeks ago and so I decided to try my hand at carne asada and MY WORD this was just as good (if not better) than any restaurant carne asada I've had.  SO GOOD and so easy and I really liked that the marinade was quick and the meat didn't have to sit overnight.

Chipotle Beef Bowls

 

I made this chipotle beef (barbacoa) recipe the other night and it was an immediate hit with my family.  Dave, Luke and I made rice bowls with ours while Mason and G used the meat in quesadillas.  It was super tender and flavorful and we eagerly added this to our "Favorites" list.  I love a recipe that uses the crock pot - especially as we head into summer - and hope you love it too.  If you end up making it  I'd love to hear what you think!

Huli huli chicken

 I made this huli huli chicken recipe last week and OH MY WORD it was SO SO SO GOOD!  Dave and I joked that it was giving "mall chicken" from back in the day when you'd go get that bourbon chicken at the food court but SO MUCH BETTER!  Dave and I ate ours over sticky jasmine rice and the kids made sliders with Hawaiian rolls. It was super flavorful, super easy and the leftovers reheated beautifully.  This will for sure be on repeat and I hope you love it too!

BEST Burgers Ever!

  Today I'm sharing our recipe for burger patties just in time for Spring grilling.  I've shared these a couple of times because they're simple, full of flavor and WAY BETTER than a grocery store patty.  I've been making them this way for years and always get requests for the recipe and/or to bring them when we hang out and grill with friends.

Here's what you'll need to make 16-18 burger patties
(you can easily cut this recipe in half but we're often making them for a crowd OR I'll make a bunch of patties and then freeze them (more on that in a minute) but feel free to adjust!)

- 6 lbs 80/20 ground beef 
(it HAS to be 80/20.  Now is not the time for 96/4 lean beef... trust me)
- 1 cup Italian bread crumbs
- 1/2 cup milk
- 1/4 cup Worcestershire sauce
- 4 eggs

Pastina Soup

 Back in the Fall I saw a TON of IG reels talking about "Italian penicillin" aka Pastina Soup and decided immediately it was a must try.  I looked at a bunch of different recipes and ended up just kind of winging it yesterday and it was SO GOOD!  This is more of a general process vs a hard and fast recipe but if you want something hot, comforting, simple and DELISH give this a try!

Chicken Pot Pie

We're currently experiencing "false spring" here in Texas, but I have this bookmarked to make on the first night it turns chilly again here.  If you're currently experiencing actual Winter this is a MUST!  The recipe makes two pot pies so it's perfect to feed a crowd, freeze one for later, or bring to a friend.  You can also serve the filling over warm biscuits if that's more you're thing.  It's so much better than a store bought pie and is comfort food to the max!

Swedish Meatballs

I made this on Monday night and y'all - it is unreal EVERY SINGLE TIME.  It's in my top-five recipes of all time and I just love it so much.  The ingredient list seems a little bit daunting but you probably have a lot of it on hand and I can't even begin to describe just how delicious this recipe is.  The sauce is out of this world good and the meatballs themself are pretty incredible too.

Chili

 In honor/celebration of the fact that we're ACTUALLY getting some Fall weather here today I thought I'd share my chili recipe!

Chili is one of our family favorites during the Fall/Winter - I love that it's one pot and that my kids will take it in their thermos for lunch.  This is the recipe that my mom always made while I was growing up so it's a total comfort for me and I try to keep the necessary ingredients on hand because sometimes you just NEED a pot of chili.  I had planned on sharing this recipe next week, but with Super Bowl this weekend I thought I'd share since a big pot of this with cheese and fritos would be an awesome game-watching meal.

Sour Cream Noodle Bake

This was a recipe that I saw floating around on facebook and I screenshotted the ingredients and then just kind of pieced it together on my own because I definitely forgot to screenshot the directions. hahaha. Thankfully it was SUPER easy and all of my kids scarfed it down.  Next time I'll probably double it because they all love to take leftovers and I definitely think we'll be adding it into our rotation as the weather cools down.

Chicken Spaghetti

The BEST Meatloaf EVER!

Yesterday I did a little "day in the life" on IG and between that (where I showed the meatloaf that I prepped on the weekend) and my post from Monday where I talked about prepping the meatloaf ahead of time I figured it was time for my meatloaf recipe to have it's own space here even if I don't have a picture ;)

What You'll Need...
- 2 lbs lean ground beef
- 3/4 cup milk
- 3/4 cup Italian bread crumbs
- two eggs
- handful of rolled oats (I know this sounds weird)
- Worcestershire sauce
- salt/pepper

What You'll Do...
In a giant bowl combine the ground beef, milk , bread crumbs, a handful of rolled oats, a few splashes of Worcestershire sauce, two eggs and a few pinches of salt and pepper.  Use your hands to combine everything thoroughly and then put it into a loaf pan.  Press it down in there really well and then bake it at 350 degrees for an hour and fifteen minutes.  Let it rest for a few mins and then you can pour off the excess fat, cut and serve.

Meatloaf Sauce.
Dave, Luke and I meatloaf with meatloaf sauce while Mason and G prefer it plain.  If I'm feeling crazy I'll make two meatloaves (yes, you read that right) and put sauce on one because it's just so good.  Here's what you'll need if you decide to make it...

- 3/4 cup ketchup
- 1.5 teaspoons white vinegar
- 2.5 Tablespoons brown sugar
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- salt and pepper

Whisk these all together while your meatloaf is baking.  About 30 minutes before it's done pour it over the top and let the meatloaf finish. 

Again - it doesn't look like anything special but it's easy to put together, gives you some time after you pop it in the oven to prep your side(s) and tastes even better the next day.  If you try it eat one of the end pieces and let me know what you think!

Broccoli Rice Casserole

 If you're looking for a side dish that is creamy and cheesy and delicious you HAVE to try this broccoli rice casserole.  I did pretty much the whole thing in one pot and it was SO SO SO GOOD!
