In honor/celebration of the fact that we're ACTUALLY getting some Fall weather here today I thought I'd share my chili recipe!
Chili is one of our family favorites during the Fall/Winter - I love that it's one pot and that my kids will take it in their thermos for lunch. This is the recipe that my mom always made while I was growing up so it's a total comfort for me and I try to keep the necessary ingredients on hand because sometimes you just NEED a pot of chili. I had planned on sharing this recipe next week, but with Super Bowl this weekend I thought I'd share since a big pot of this with cheese and fritos would be an awesome game-watching meal.
Here's what you'll need...
- 2 lbs of ground beef
- chopped onion (I use frozen and just throw some in there)
- 2 cans light red kidney beans (drained)
- 2 cans dark red kidney beans (drained)
- large can of diced tomatoes
- 2 cans of tomato soup
- brown sugar
- chili powder
- Worcestershire sauce
Step One - brown the ground beef with the onion, drain.
Step Two - drain the beans, put the beans, soup and tomato into the pot with the cooked ground beef and onion.
Step Three - shake in a few splashes of Worcestershire sauce, add a tablespoon of brown sugar and about 2 tablespoons of chili powder (you can add more or less depending on your family's tastes).
Step Four - let the chili simmer for a couple of hours and then adjust seasoning as needed. You can also put everything into a crockpot and cook it on low that way.
So simple but so good!!! Dave and I love to eat this topped with shredded cheese and served with sweet cornbread (if you have a Market Street grocery story by you their cornbread is THE BEST!) and my kids love it with cheese and Fritos :)
