Cheesy Tater Tot Sausage Casserole

 I made this this weekend and it was easy, hearty and a hit with my kids.  Is it gourmet? No.  Will it make a ton and fill up your teenage boys? YES!



You'll combine a 32 oz bag of frozen hashbrown potatoes with 1/2 diced onion, 1 1/2 cups shredded cheddar and 1 package of smoked sausage sliced in your greased slow cooker.  Then you'll want to mix together 1/2 cup sour cream, 1/2 cup milk and a 10-oz can of cream of mushroom soup and pour that on top.  Cook on low for 5-ish hours, top with an extra 1/2 cup cheese and serve!



I doubled the recipe (I used the one big can of soup instead of two smaller ones) and it made A TON.  I think the next time I make this I'll make the standard recipe but double the sausage (we use turkey smoked sausage) to get a bit more of the protein in there since it was pretty heavy on the potatoes.
