I'm going to be honest - it's birthday week, cheer tryout week, track district week AND prepare for golf district meet week at our house along with standardized testing week in middle school and YOUR GIRL IS A BIT FRAZZLED! I didn't have a chance to write the post I intended to write tonight so instead I'm re-sharing my Dr Pepper cake recipe in honor of me making it tonight for Mason's birthday dinner Wednesday night ;). It's a tried and true FAVE and is so easy but SO DELISH!
It's a really moist chocolate cake with a hint of cinnamon. It's awesome and. you should make it immediately.
Here's what you'll need...
For the cake:
1 cup butter
1 cup Dr.Pepper (NOT diet!)
4 tablespoons cocoa
1.5 teaspoons cinnamon
2 cups flour
1 teaspoon baking soda
2 cups sugar
1/2 teaspoon salt
2 eggs (room temp)
1/2 cup buttermilk
2 teaspoon vanilla
For the frosting:
1/2 cup butter
1/4 cup Dr.Pepper
3 tablespoons cocoa
2 cups powdered sugar
1 teaspoon vanilla
First up, combine all the dry ingredients...
Mix them all up and then add in the eggs, buttermilk and vanilla.
Melt the butter and combine it with the 1 cup of Dr. Pepper and then add that in as well...
This is where I totally failed and forgot to take anymore pictures. :)
Mix it all together, pour it into a 9 x 13 cake pan and bake it at 350 for 35 minutes (or until a toothpick comes out clean).
When the cake is cool, take the room temperature butter and combine it with the powdered sugar and cocoa powder. Slowly add in the vanilla and Dr. Pepper and beat it on high until it's light and fluffy. Spread the frosting on enjoy!!!
I've made this as cupcakes as well and piped the icing on using a Ziplock bag... but the sheetcake is just so easy!!!
