Who doesn't love a blueberry muffin. For real. They're one of my very favorite sweet treats and this is the recipe I go back to time and time again. They're packed with blueberries, sweet but not too sweet and the topping is the icing on the cake.
Here's What You'll Need...
For the streusel topping:
- 4 tablespoons brown sugar
- 4 tablespoons flour
- 2 tablespoons melted butter
- large pinch of cinnamon
For the muffins:
- 2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup sugar
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 1/2 cup buttermilk, room temp
- 2 cups blueberries, preferably fresh
Here's What You'll Do...
Step 1) preheat the oven to 350 degrees and line a muffin tin with paper liner cups.
Step 2) Prepare the streusel topping by stirring together the melted butter, brown sugar, flour and cinnamon. Stir until it's well combined and crumbly. Set aside.
Step 3) In another small bowl, whisk together flour, baking powder and salt and set aside.
Step 4) In a large bowl, beat the butter and sugar until light and fluffy
Step 5) Add the eggs, vanilla and buttermilk
Step 6) Add the flour mixture and stir until just combined. Gently fold in the blueberries.
Step 7) Divide the batter evenly into the 12 muffin cups. The batter will be THICK and the cups will be full - go with it!
Step 8) Sprinkle the muffins with streusel topping and bake at 350 for 20 to 25 minutes or until a tester comes out clean.
These didn't last long at our house and the biggest compliment came from some of Mason's friends who were over after school and proclaimed that they were "better than Starbucks". Yes. Ma'am.
