Fettuccini Alfredo - YOU CAN DO IT!!!

I loooooove a good alfredo sauce.  Fettuccini alfredo was always my "go-to" meal when we went out to dinner until I became an adult and realized that may not be the healthiest choice :)  That said... I still love a great side of alfredo pasta on occasion, but for some reason always thought it would be super complicated to make.  Apparently I was wrong because I tried out a recipe from a friend and it was DELICIOUS and super easy.




What You'll Need..
- 12 oz dry fettuccini pasta
- 1/2 cup butter
- 3/4 cups heavy cream
- salt and pepper
- dash garlic salt
- 3/8 cup grated Romano cheese
- 1/4 cup grated Parmesan cheese

(Note - originally I was going to make a double batch of this which is why there are twice as many ingredients as needed)




What You'll Do...

1) Bring a big pot of lightly salted water to a boil.  Cook the noodles until al dente.

2) In a large saucepan (I used my dutch oven) melt the butter into the cream over low heat.  Add salt, pepper and garlic salt (I didn't measure anything.... I just shook a bit in there).  I also wanted to make sure mine was extra creamy and so I sprinkled in a little bit of cornstarch as well.  Stir in the cheeses over medium heat until melted.

3) Add the pasta to the sauce.  Serve immediately.  








 Done!!! And sooooo yummy!!!







And y'all.  It was so easy!!!  I'm going to experiment a bit with half cream, half milk and will keep y'all posted.  Although I have a feeling it won't be as good :) 

I think this would be fantastic with grilled chicken and a salad or if shrimp is your thing (it's not mine, but Dave loves it) this would make an amazing side to that as well. 



I can't believe it took me this many years to try my own alfredo sauce, but am so glad that I finally did it!  If you're on the fence about trying it out you should totally go for it!

  6. I've never made alfredo sauce at home (we need to make most of our meals low fat due to our son's genetic metabolic disorder). But now I want to make this recipe right now. For breakfast. Ha!

  8. Yum! My (italian) mom always made alfredo with bacon and peas- never chicken! So it was weird for me to learn that chicken alfredo is the most common!

  11. This is a very good "skinny" Alfredo recipe. You should give it a try.
    YIELD: 4 SERVINGS
    SKINNY FETTUCCINE ALFREDO
    This easy fettuccine alfredo recipe is made "skinny" with a lighter alfredo sauce recipe -- but it's as delicious and creamy and flavorful as ever!

    PREP TIME: 5 MINS COOK TIME: 20 MINS TOTAL TIME: 25 MINS
    INGREDIENTS:

    12 ounces fettuccine (or any pasta shape)
    1 Tablespoon extra virgin olive oil or butter
    4 cloves garlic, pressed or finely-minced
    3 Tablespoons all-purpose flour
    1 cup chicken stock
    1 cup low-fat milk (I used 1%)
    3/4 cup freshly-grated Parmesan cheese
    1/2 teaspoon salt
    1/4 teaspoon black pepper
    (optional toppings: chopped fresh parsley, extra Parmesan)
    DIRECTIONS:


    Cook pasta al dente according to package directions, in generously-salted water.

    Meanwhile, heat olive oil (or melt butter) in a large saute pan over medium-high heat. Add garlic and saute one minute, stirring occasionally, until fragrant. Sprinkle with flour, and stir to combine. Saute for an additional minute to cook the flour, stirring occasionally.

    Slowly add chicken broth, whisking to combine until smooth. Whisk in milk, and bring the mixture to a simmer. Let cook for an additional minute until thickened, then stir in Parmesan cheese, salt and pepper until the cheese melted. Reduce heat to medium-low until pasta is cooked.

    Drain pasta, then immediately add pasta to the saute pan with alfredo sauce. Toss to combine. Serve topped with chopped fresh parsley if desired.

  13. Alfredo has always been one of my go-to meals to order at restaurants. I make a faux alfredo recipe at home using Campbell's 98% fat free broccolli cheddar soup. It is so flipping good!

  14. Oh you are a life savor. I just found out this morning that I need to make a pasta dish for my daughters basketball banquet. I hate when my kids forget to tell me important things like that. Anyways, I think I might just give this a try and add in rotisserie chicken. It might not be as good since I can't serve it right away, but it's better than nothing right?! :)

  16. I think it's Olive Garden that has the seafood alfredo with shrimp and scallops....OMG so good!!! I haven't had it in years and now it's all I can think about!!! I'm definitely going to have to try this soon! I really wish I didn't hate to cook.

  17. I was watching Guy's Grocery Games on food network last night and on one of the episodes, the challenge was to make an Italian feast. One contestant made fettuccine alfredo but couldn't use heavy cream due to a restriction that was in place on what could be used. She chose to use half and half instead and it ruined her sauce because it coagulated due to not having that fat content from the cream.

  18. This recipe for alfredo is not any healthier but super, duper easy:
    1 stick butter
    1 8oz container Sour cream or Greek yogurt
    1 T garlic powder
    3/4 C parmesan cheese
    pepper to taste
    Melt butter, add garlic powder and pepper, dump in sour cream, stir together and add Parmesan cheese. Serve over favorite noodles.
