Costco Dinner - Chicken Parm


It's no secret that I do most of our shopping at Costco and while I've shared Costco faves several times over the years I thought it would be fun to share a complete meal idea with items all from Costco.  Is this anything revolutionary? NO. Was it delicious, enough for a couple of meals and all of my kids asked me to make it the next night? Also yes.  Another perk is that I use InstaCart to do sameday orders from Costco which means I could have all of these items delivered within a couple of hours for a "homemade" meal on a busy night. 



Here's what you'll need...

These are HAND DOWN the best frozen chicken option.  They taste just like ChickFilA.

If you like Rao's you MUST buy it at Costco because the jars are bigger and it's way cheaper.

I stand by the statement that Kirland brand cheese is some of the best cheese out there.  This fresh mozzarella is no exception (and we LOVE their parmesan block as well)...


These tortellini....


... and the best salad kit there ever was.


You'll make the chicken as directed... about 3 mins short of the full cook time.  While the chicken is cooking, warm the sauce on the stove and then when the chicken comes out of the oven put a scoop of sauce on each piece of chicken...


... then top each one with a slice of mozzarella...



... and pop them under the broiler for a few minutes (about 3) until it's all melted.


If I had had fresh parsley I would have topped them with some but I didn't and nobody minded ;)

Serve with the tortellini and the remainder of the sauce as well as the Caesar salad and relish in all the time and effort you saved and all the compliments your family will give you. hahaha

My kids are monsters and eat A TON but if your kids are younger or not as ravenous as mine you could easily use half the salad and half the tortellini and make these ingredients stretch a bit (sidenote - this is not the entire bag of chicken and we didn't eat all of these... my boys asked me to make a couple of extras so they could reheat it for lunch the next day - hahaha).

  1. We love that brand of frozen chicken and the Rao's sauce is for sure a staple in our house! This looks so good and easy - we are definitely going to have to add this into our meal rotation.
