Y'all. This recipe is such a good one. Really simple. Really delicious.
Here's What You'll Need...
- 1 and 1/3 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 3/4 teaspoon ginger
- 1/4 teaspoon nutmeg
- 1/2 cup vegetable oil
- 1 cup packed brown sugar
- 2 large eggs, room temperature
- 1/3 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 and 1/2 cups peeled, shredded and chopped carrots
- 8 oz cream cheese, room temperature
- 1/2 cup unsalted butter, room tempterature
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
Here's What You'll Do...
1) In a large bowl whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger and nutmeg.
2) In another bowl mix together the oil, brown sugar, eggs, apple sauce, and vanilla extract. Pour the wet ingredients into the dry and fold until completely combined.
3) Pour the batter into 12 lined cupcake wells and bake at 350 degrees for about 34 minutes or until a toothpick comes out clean.
4) When the cupcakes are cool make the cream cheese frosting by beating together the butter and cream cheese until smooth and then beating in the confectioner's sugar and vanilla extract and beating again. Pipe the icing onto the cooled cupcakes.
