Super Bowl Queso

I have a confession - I didn't realize that the Super Bowl was this weekend. hahaha

I was making my meal plan for the week and they were both like DON'T FORGET THE QUESO INGREDIENTS and there was my reminder. ;)  So we really only make this queso once a year and it is SO SO SO GOOD!  I thought I'd reshare my post on it since it's been a few years and your family may need to make this a Super Bowl tradition as well!

If you're looking for a BIG queso recipe this one is for you - I pretty much do this with chips, MAYBE some pigs in a blanket or meatballs and a dessert and call it a day.

Here's what you'll need...
- 32 oz Velveeta
- 1 block cream cheese
- 1 pound browned meat (I like half sausage, half ground beef)
- 1 can Rotel
- 1 can cream of mushroom soup

This is the point in the activity where you stop mentally adding up the calories ;)  Just go with it.

Step 1 - Cut up the Velveeta.  Pour everything except the meat into the crockpot.  Depending on when you're going to serve it set it to low or warm.  You're just trying to melt everything.  Once everything is melty (sometimes it doesn't look melted... but once you stir it it will!) add in the cooked meat, stir to combine and then heat through on low.  Serve warm.

I was making a double batch for a party last weekend and had a helper with the cheese :)  I highly recommend wearing a leo while making queso.

I turned mine on warm around 9 am and got home around noon at which point I stirred it, added in the meat and warmed through on low for about 30 mins before taking it to the party.  Since I was making a double batch I browned 1 pound of sausage with 1 pound of ground beef and then used that mixture. YUM!

And here's where I tried to take a pretty picture of it.  But y'all.... it's queso and looks don't matter.  ;)
It's what's on the inside that counts and what's on the inside is creamy cheesy goodness.

I have no intention of watching the game this weekend, but have every intention of doing this...

What's your favorite Super Bowl food?  If you have a great recipe to share I'd love it if you'd leave it in the comments!

Happy Wednesday, Friends!!!

  1. Your comment about the calories had me laughing, that was exactly what I was thinking when I saw the line up ingredients. Good think you picked the lower fat cream cheese, hahaha! It does look like a delicious treat to enjoy every so often.
