White cheddar mac and cheese (and an easy dinner idea)

 Last week I made one of our very favorite dinners EVER and thought I'd share in case you're looking for something to add to your meal plan this week.  I did a white cheddar mac and cheese which was a perfect side dish to go along with  the best pork chops ever and some brussel sprouts.


Here's What You'll Need...
- 1 regular sized package of medium pasta shells
- 1/4 cup butter
- 1/4 cup flour
- 2.5 cups 2% milk
- pepper
- 2 cups shredded white cheddar
- 4 slices provolone
- 1/4 cup graded Parmesan cheese


Here's What You'll Do...
- Cook the pasta according to the package directions, drain and set aside.

- In a large sauce pan or Dutch oven, melt the butter over low heat and then whisk in the flour until smooth.  Gradually pour in the milk and whisk until it's all combined.  Put in a pinch of freshly ground pepper.  Bring it to a boil, cook and stir for 2 minutes until it thickens up a bit.  Stir in the cheeses until they're melted and then stir in the cooked pasta.




This seriously couldn't be easier and my kids GOBBLED it up!  It was great as a side dish but would also be great topped with grilled chicken or with diced ham and peas or broccoli mixed in.  DELISH!

Sidenote: If you're looking for a super quick and easy way to serve Brussels sprouts here you go...


... spray some avocado oil spray in a pan and put in a whole package of shaved brussel sprouts.  Keep cooking until they have a bit of brown on them and then top with some balsamic glaze and honey.  Stir and serve.  EASY!
