Twice baked red potatoes

 

I've made these potatoes twice in the last week and a half and my family can't get enough!  Once they were a side dish for this flank steak and on another night they accompanied meatloaf and they're just so dang good!



Here's What You'll Need...
- 5 or 6 large red potatoes, washed
- 1/2 cup plain nonfat yogurt
- 1/2 cup milk
- salt/pepper
- 3 tablespoons butter
- dried parsley
- shredded monterrey jack cheese


I have virtually no pictures because they just come together so quickly and simply - but here are the steps...

1) Prick your potatoes all over with a fork.  Microwave them on high for about 15 minutes, turning over once.  You want to be able to slice through them easily with a knife.  If they still don't seem done in the center, pop them back in for a few inutes.

2) Cut the potatoes in half and scoop out the insides into a large mixing bowl.  I usually hold the potatoes in a tea towel to make this easier.

3) Once you have all the potatoes scooped out (you want to leave about 1/4 inch of potato in the skins), add in the milk, butter, yogurt, a handful of cheese and some seasoning.  I like Lawry's salt and some pepper with parsley flakes.  You really can't go wrong.  Mash everything up until its combined and then use the mixture to refill the potato skins.  

4) Top them with more cheese and then pop them in the oven at 350 for about 30 minutes or until they're hot and bubbly and melty.  



SO yummy! and SO SIMPLE!

  1. This was one of the first side dishes I mastered when I got married (many, many years ago!), and to date, its one I make the most! Yum!

  3. I made these tonight to go with steaks. OMG...sooooo freaking GOOD!!!!!! I will DEF be making these again!!!!!!
