St Patricks Day EASY Lime Cake

I'm going to be honest - I didn't have high hopes for this cake because it seemed kind of odd BUT it was cute and festive and so I figured I'd give it a shot.  WHO KNEW I'd be making everyone's new favorite dessert!  Seriously - my kids (and Dave!) can't get enough.  And it couldn't have been easier!



Here's What You'll Need...
- 1 white cake mix and the ingredients to make it (water, oil, eggs)
- 2 small packages lime jello
- 1 small package vanilla pudding mix
- 1 cup milk
- 1 container cool whip
- green sprinkles


Heres What You'll Do...

Step 1 - Prepare the white cake according to the directions on the box.  Let it cool in the pan (on a wire rack) for an hour or so.  It should be cool to the touch.

Step 2 - Use the end of a wooden spoon, wooden skewer, etc. to poke holes all over the cake.  Try not to poke all the way to the bottom.

Step 3 - Combine both packages of jello with 1 cup of boiling water.  Stir to dissolve the jello powder and then add 1/2 cup cold water.  Pour the jello over the cake, you can kind of "push" the jello into the holes.

Step 4 - Cover the cake and refrigerate for about 30 minutes.

Step 5 - Mix the vanilla pudding mix with 1 cup of cold milk.  Beat on medium for a minute or so and then turn it up to high for about 2 minutes.  Gently fold in the container of cool whip and spread over the cake.  Top with sprinkles.








I really don't understand what makes this so good.  It's not at all like I thought it was going to be and everyone in my family LOVED IT and immediately started talking about what other flavors of jello we could use "next time" ;) hahaha



It kind of gave me banana pudding vibes with the topping but seriously this blew me out of the water with how simple and flavorful it was!

  3. My daughter makes this with strawberry cake and jello since its our favorite and it is delicious!! We keep ours in the fridge and are always very sad when the last piece is gone. I love the idea of making it green for St. Patty's day!

  4. We love this cake! My version uses lemon pudding for the frosting so you end up with a lemon/lime cake. Great during the hot summer months!

  5. This is how my mom made all our birthday cakes growing up! And even if it's not a poke cake, the cool whip/pudding/milk mixture is the only frosting we use on cakes. You can change up the pudding flavor if you want too!

  6. We grew up on these 'jello cakes' and still make them for family birthdays and other get togethers! Made a Christmas version alternating rows/designs with cherry & lime jello and red & green sprinkles.
    Also delicious with funfetti cake mix & strawberry Jello. Also made a cookies & cream poke cake version with chocolate cake mix and Oreo pudding mix for the filling... Yum!

  7. OMG! I used to make my husband a version of this cake to taste like a Raspberry Zinger. Raspberry jell-o with just cool whip as the icing dusted with sweetened coconut. There are SO many variations!!! YUM!!!!
