Baked Chicken Tacos

 We LOVE a baked taco and these are so simple and easy thanks to rotisserie chicken.  Amen ;)  I make a single batch and it's plenty for one meal (we serve with Mexican rice and/or salad) but I'll often shred enough chicken to make them fresh a second night that week.



Here's What You'll Need...
- About 1/2 lb rotisserie chicken
- onion, chopped
- stand and fill taco shells
- Mexican blend cheese
- taco seasoning
- diced tomatoes, drained
- 1 can refried beans


Here's What You'll Do...
Preheat your oven to 400 degrees.  Spray a 9x13 with cooking spray and then place the shells into the dish and bake for about 5-7 minutes just go get them a little crispy.

Cook your onions in a little bit of olive oil.  I don't really measure - it's about half an onion in a few pours of oil.  

Once they're soft and starting to get transluscent turn the heat down and add your tomatoes (MAKE SURE THEY'RE DRAINED otherwise your tacos will get soggy), about 1/2 a packet of taco seasoning and your shredded chicken.  I will typically turn the element off but leave the pan on just to kind of heat everything through for a few minutes (if you want things spicier you can add drained green chiles)

At this point the shells should be coming out of the oven and you'll spread some refried beans into the bottom of the shell (I use about 1/2 - 3/4 of the can total), then add the chicken mixture and then top with cheese.

Pop them back into the oven for 5-7 minutes or until the cheese is all melted and then serve them hot with your choice of toppings (shredded lettuce, cilantro, salsa, sour cream, etc.)








These are a fun way to mix up your regular taco night and all my kids LOVE THEM.  You can really make them to your own liking with the toppings or adding heat to the chicken mixture and I love how simple they are using rotisserie chicken.

  1. These are so good! Found the recipe on Pinterest a couple years ago and it quickly became a regular meal over here. Bonus points that all 3 of our kids actually eat them haha
