Today I'm sharing another go-to dinner recipe. It's quick, simple, all my kids devour it and I typically have everything on hand. You can find the original recipe HERE.
Here's What You'll Need...
- 1 lb ground beef
- 1 jar tomato sauce (I believe mine was 18 oz... it's not the regular size but a teeny bit smaller)
- pinch of salt
- fresh ground pepper
- 8 oz egg noodles
- 1/2 cup sour cream
- 1 1/4 small curd cottage cheese
- a few chopped green onions (I usually do 2-3)
- 1 cup grated sharp cheddar cheese
Step 1 - brown the ground beef, drain the fat, add a pinch of salt and a few pinches of ground pepper. Lower the temperature and let the sauce simmer.
Step 2 - Cook the egg noodles to al dente
Step 3 - In a separate bowl combine the sour cream, cottage cheese, a few pinches of pepper. Add in the cooked noodles, put in few chopped green onions and stir.
Step 4 - Add half the noodles to the baking dish, top with half the meat and then sprinkle on some cheese. Repeat ending with cheese. Bake at 350 degrees for about 20 minutes.
That's it! Super easy to double, simple to put together after school, etc.
