Raspberry "Love Muffins" :)

Mason, Griffin and I all LOOOOVE raspberries.  I'll buy a pint and they're pretty much always gone by the time we get home from the grocery store.  The raspberries have been SO GOOD lately that when I saw  this recipe for raspberry crumble muffins I knew I had to try them out and OH MY WORD I'm so glad I did.  We must be in full-on Valentine's Day at our house because Mason asked me if they were special Valentine's muffins and said if so we should call them love muffins :)  So here we are.



What You'll Need
- 1/4 cup unsalted, softened, butter
- 3/4 cup white sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cup all purpose flour
- 1 tablespoon flour
- 2 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1/2 cup buttermilk
- 1 1/2 cup raspberries

- 2 tablespoons cold butter
- 1/4 cup flour
- 2 tablespoons white sugar
- 2 tablespoons light brown sugar


What You'll Do
Step 1) Preheat the oven to 375 degrees and line a muffin pan with liners (12 muffins total)

Step 2) Cream together the butter and sugar, beat in the egg and vanilla until they're combined.




Step 3) Whisk together the flour (except for the extra tablespoon), baking powder and salt in a separate bowl.  

Step 4) Slowly add the buttermilk and flour mixture,alternating between the two until they're both combined into the creamed butter/sugar mixture.





Step 5) Gently toss the raspberries in the 1 tablespoon of flour, fold 1/2 of them into the batter.



Step 6) Fill each of the muffin cups with 1/4 cup of batter.  Top each one with the remaining raspberries.


Step 7) In your mixer or using a pastry cutter, mix together the cold butter, flour, and sugars to make crumbs.  Top each of the muffins with the "crumble" mixture. 




Step 8) TURN THE OVEN DOWN TO 350 degrees and then bake for 20 - 25 minutes or until a toothpick inserted comes out clean (except for raspberry)

These are so incredibly good and PACKED with raspberries.  Seriously.  SO GOOD.

The crumble is EVERYTHING and the "crispy bottom" is my favorite part.  I don't see there being any reason that this same recipe wouldn't work with blueberries, strawberries or a mixture of berries.  Luke LOVES a blueberry muffin and so that's going to be my next variation.  I think that this is going to be the perfect recipe to have on hand this summer when berries are abundant  and I have odds and ends that need to get used up quickly.

  1. Oh yum. I wonder if I could modify for mini muffin pan so my husband with ALS could eat them easier! I am going to try!!

  2. Yum, these look so good. I have a question off topic, I purchased the Kawaii doodle book from Amazon (pretty sure you recommended it), do you have any "how to draw" book recommendations for boys? My son is the same age as Luke and would love a similar type book. Thank you
