Favorite Fall Breads

I love a Fall bread.  I love how the entire house smells amazing, slicing a piece off of a warm loaf and having it with a cup of tea outside in the cool air... all of it.  Fall hasn't arrived in Texas yet but it for sure has arrived in my kitchen and I've made this banana bread at least 6 times in the last two weeks.  Yes, you read that right :) hahaha




If you want to make an awesome loaf of banana bread here's what you'll need...
- 1 stick of butter or margarine, room temperature
- 1 cup sugar
- 2 eggs
- 3 ripe bananas
- 1 tablespoon milk
- 1 teaspoon cinnamon
- 2 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder


Here's What You'll Do...

Step One - Cream the butter and sugar until light and fluffy.  Add the eggs one at a time and beat until it's all combined.



Step Two - Smash the bananas in a bowl and then add in 1 teaspoon of cinnamon and 1 tablespoon of milk and mash it all together.

Step Three - In a separate bowl mix together the flour, baking soda, baking powder and salt.  



Step Four - Add the banana mixture to the butter/sugar mixture and mix until it's combined.  Add in the flour mixture and mix until the flour is all incorporated.  At this point you can add in 1 cup or so of chocolate chips or chopped nuts... whatever your preference is.  





Step 5 - Spray a loaf pan with Baking Joy spray (or you can butter/flour your pan), pour in the batter and pop it into a 325 degree oven for about an hour.  Mine takes an hour and 10 minutes, but I'd check it with a toothpick at an hour and then decide if it needs more time.



When it comes out of the oven let it cool in the pan for about 5 minutes and then remove it from the pan and let it cool on a wire rack.  

This is my go-to banana bread recipe and has been a hit with everyone who has tried it.  We've shared it with friends, family, teachers and there's never any leftovers.  I prefer mine "classic" with no chocolate chips but my family prefers the chocolate because #duh :)

  3. My family loves these breads also. I put a twist on it and we always make them in our muffin tins. That way my daughter can grab them easily for a snack and it is so fun to buy cute muffin liners for each season. There is an added bonus of no cutting mess.

  7. We have been doing the same! We love the pumpkin bread from TJs! Also, my son loves to top it with the cinnamon bun spread from TJ... so, so good!!
