Pumpkin Bread

I mean - would it really be Fall without pumpkin bread?  I think not. 




A friend brought this pumpkin bread to work and it was SO GOOD I couldn't get it out of my head - so I got the recipe from her and have been making it ever since.

Here's What You'll Need...
- 2 cups flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cloves
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 1/2 sticks butter or margarine, softened
- 2 cups sugar
- 2 eggs
- 1 can pumpkin (15-oz)


Here's What You'll Do...
1) Mix together the flour, salt, baking soda, baking powder, cloves, cinnamon and nutmeg.  Set aside.


2) Beat together the butter and sugar until combined



3) Add the eggs and then beat for about a minute or until light and fluffy.




Step 4) Add in the pumpkin, beat together.



Step 5) Beat in the flour mixture




Step 6) Split the batter between two greased/floured pans (I use Baker's Joy).  At this point I added a handful or so of dark chocolate chips to half of the batter.



Step 7) Bake at 325 degrees for an hour (or until a cake tester comes out clean)



Step 8) Let it cool in the pan for about 15 minutes and then turn the loaves over onto a rack to cool.





This is SO GOOD with or without chocolate chips and is, by far, my favorite pumpkin bread recipe to date!

  1. This looks delicious! If you're ever in a jam and need some pumpkin bread quickly, try the Trader Joe's pumpkin bread mix. It's amazing! Oh, and always include half a bag of chocolate chips!

  4. Love Pumpkin Bread! Next time, add a layer of cream cheese (cream cheese + powdered sugar); put half the bread mixture in the pan, add cream cheese, cover with other half of bread mixture. Delicious!
