If you love oooey, gooey, rich bars with tons of flavor than these magic cookie bars are for you!
Here's what you'll need....
- 2 cups graham cracker crumbs
- 1/2 cup light brown sugar
- 1.5 cups chopped pecans
- 1/2 cup butter, melted
- 1/4 tsp salt
- 1/4 cup cocoa powder
- 1 cup shredded sweetened coconut
- 2/3 cup chocolate chips
- 2/3 cups white chocolate chips
- 2/3 cups butterscotch chips
- 1 can (14 oz) sweetened condensed milk
Step 1 - Preheat the oven to 350 degrees. Grease a 9x9 baking pan and line it with parchment paper.
Step 2 - Combine the graham cracker crumbs, brown sugar, butter, 1/2 cup chopped pecans and salt in a large mixing bowl. Mix until it's well combined and then press half of the mixture into the bottom of the prepared pan.
I've mentioned before that I use my mom's really old food processor and it did the trick AGAIN with the graham cracker crumbs and pecans.
Step 3 - Add the cocoa powder to the rest of the graham cracker mixture, mix it well and then spread it on top of the first layer of graham cracker crust. Press it down firmly so it sticks to the first layer.
Step 4 - Top with the shredded coconut, additional cup of pecans, chocolate chips (I used dark chocolate morsels), white chocolate chips and butterscotch chips. Press everything down a bit to help the layers all stick together.
Step 5 - Pour the sweetened condensed milk over the top of the entire pan
Step 6 - Bake for 30 minutes or until the top starts to turn golden brown. If it stats looking like it's getting too brown you can loosely cover the pan with aluminum foil. let the bars cool completely before removing and trying to cut.
When your mom is taking a picture and you are so pumped about trying one...
Don't be afraid to push down on all the chips/nuts in step 4. I wish I had pushed mine down even more as some of the chips fell off when I cut them... although that didn't stop anyone from enjoying ;)
These are rich and decadent and if you're like me even just a small bar can satisfy your sweet tooth ;) I brought these to school and left them in the work room for my co-workers and they were gobbled up by the end of the day with rave reviews. The recipe is super adaptable - so if you love dark chocolate feel free to add in more of those chips and take out the butterscotch... or add in peanut butter chips as well or omit the white chocolate all together. These would be a great way to use up those ends-of-the-bags of chocolate chips taking up room in your pantry!
