I'm going to be really honest. I'm not generally a big rice krispie treat fan. They're typically super sticky and just kind of unmanageably sweet. Griffin, on the other hand, would eat them DAILY ;)
I saw a recipe for peanut butter chocolate rice krispie treats and decided to give them a whirl and they are a game changer... and please know that I don't use that phrase lightly because I actually hate that phrase - hahaha. They're not sticky, they cut super easily, the chocolate top is chefs kiss... they're just delish!
What You'll Need...
- 1/2 stick unsalted butter
- 1/2 cup peanut butter
- 10 oz mini marshmallows
- 2 cups chocolate chips
- 3 tablespoons vegetable oil
- 6 cups Rice Krispies
What You'll Do...
- Melt the butter with the peanut butter and mini marshmallows over med-low heat
- Remove from the heat and stir in the rice krispies
- Press the rice krispie mixture into a 9x13 OR a baking pan lined with parchment paper. I think my pan was a little bigger than 9x13 which made them a little thinner which we LOVED!
- Put the chocolate chips and oil into a small sauce pan and melt over med-low heat until everything is super smooth. Pour over the rice krispies and refrigerate until set. Cut into squares and enjoy!
Note: I upped the chocolate to two cups because my tray was so large (more surface area) but if I was making these in a 9x13 I'd use 1 1/3 cup chocolate chips and only 2 tablespoons of oil. My family LOVED the chocolate but you could always scale it up or down to suit your preferences
I really want to try these, but rice krispie treats are the bane of my existence. Not kidding... Mine come out so hard you could break a tooth. Well maybe that's dramatic, but they are very hard. I've tried everything...big/little marshmallows, butter/margarine, etc. But these look so delicious that I'm willing to try again!
