I'm always on the hunt for a good crockpot recipe, especially in the summer when the last thing I want to do is run my oven. I made this salsa verde crockpot chicken last week and some of us ate it in bowl form, others made tacos with it and some used theirs in quesadillas. It was easy, full of flavor and tasted great reheated for leftovers - it was a winner!
Here's what you'll need...
- 4 chicken breasts (I used two of these packs from Costco)
- 1 jar salsa verde (about a cup and a half)
- 1/2 cup honey
- about 6 tablespoons of lime juice
- chili powder (just
- garlic powder
- onion powder
- paprika
- cumin
- salt and pepper
(I didn't really measure the spices... I just kind of sprinkled som eon there)
Here's What You'll Do...
Dump everything in the crock pot and cook on low for about 7 hours, shred the chicken and cook for about 45 more minutes.
I loved this because everyone was able to use the chicken in a way that they liked. It was really one prep for me but different meals based on preference. It would even be good served as the protein in nachos.
