Because I first shared this recipe almost exactly 10 years ago and I still make them this time of the year I thought I'd re-share my mini apple spice cupcake recipe. I made these last night and, as always, they were a huge hit. It's the cream cheese frosting, light apple spice flavor and the fact that they're bite-sized that makes them absolutely irresistible.
Here's what you'll need...
- 2 cups flour
- 1 tsp baking soda
- 3/4 tsp salt
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/8 tsp cloves
- 1/2 cup butter
- 1 cup sugar
- 1/2 cup brown sugar (packed)
- 4 eggs at room temperature
- 1 1/2 cups apple sauce

Here's What You'll Do...
1) Preheat oven to 350 and line mini muffin tin with cupcake liners
2) Whisk together the dry ingredients
3) In a separate bowl, cream together the sugars and butter
4) Add eggs, one at a time, beating after each addition, then add the applesauce and finally mix in the dry ingredients and mix just until combined.
7) Place 1 tbsp of batter into each liner
8) Bake for about 10 mins or until a toothpick comes out clean
After the cupcakes were cool, I whipped up the icing.
I beat together two sticks of unsalted butter with an 8 oz package of cream cheese.
Once those were creamed together a couple of splashes of vanilla extract and about 5 cups of powdered sugar and whipped everything until it was smooth.
Once that was all combined, I added a little bit of milk to smooth it out a bit. After I made the icing, I put it all into a ziplock bag...
... then cut the corner off to make a super fancy piping bag :)
I don't put tons of icing on them, but just enough for a bite.
