I am not generally a fan of cooked carrots - a steamed, mushy baby carrot is NOT where it's at for me. However, what I am down with is a glazed semi-crunchy roasted carrot. Today I thought I'd share how I like to prep the easiest and tastiest glazed carrots around. You really can't mess them up and they're the perfect side to any sort of meat and potatoes situation you have going on.
What You'll Need:
- 2 lb carrots
- 1/4 cup brown sugar
- minced garlic (about 2 cloves)
- 2 tablespoons butter, melted
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
What You'll Do:
Step 1 - Peel and slice your carrots into about 2" sections. I quartered mine when they were really thick.
Step 2- Toss the peeled and chopped carrots with the brown sugar, garlic, butter and olive oil. Once they're all coated, spread them into a single layer on a baking sheet and sprinke with salt and pepper.
I really didn't measure much except for the butter and the brown sugar... which I still measured fairly loosely. I really don't think you can mess these up!
Step 3 - Bake at 425 for 15 minutes, toss them a bit and then bake for an additional 10 minutes or until the edges are getting brown and crispy.
