Oldie but a goodie - tortellini soup

Listen, friends.  This week is kicking my tail.  I'm launching a house system at school complete with an entire spirit week of dress up days and activities and newsletters and videos and I AM DYING. hahaha

All fun things but it's just been BUSY so I'm resharing one of my very favorite recipes EVER.  I think the first time I had it was at Erika's house and I'm fairly confident it was one of the "original" Pinterest recipes.  It's perfect for cooler weather and busy days and it definitely doesn't taste like you just threw everything into a crockpot.

What You'll Need:
- 1 lb sausage, browned
- 1 (32 oz) box chicken broth
- 2 cans diced tomatoes
- 1 package baby spinach
- 1 package (20 oz) refrigerated tortellini
- 1 block cream cheese

What You'll Do
Throw everything in the crock pot.
Cook on low for 4-5 hours.
About an hour before it's done, stir.

Seriously.  That's it.  TRUST ME and try it ;)

  1. My daughter applied for a grant last year at the school she teaches at so they could implement the house system. She along with some of her co-workers just got back from Atlanta where they went to the Ron Clark Academy. Their school is loving the house system and several of the other schools in their district are wanting to implement it next year.

  2. I just made tortellini soup this week; though I used a can of pumpkin in place of the cream cheese since I'm trying to go dairy free (in the hopes it will stop my eczema from flaring up).
