Greek Chicken Bowls

I LOVE a Southwest Bowl so so so much and decided to try a "Greek twist" and OH MY WORD!!! My kids weren't the biggest fans BUT I love these so much and have had them for lunch multiple days the past few days.



First up I made some Greek dressing.  You could easily marinate your chicken in store bought dressing but I didn't have any and didn't want to go out so I made some by whisking together...
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 2 tablespoons lemon juice
- 2 garlic cloves, minced
- 1 teaspoon Dijon mustard
- salt, pepper and some oregano



After it was all whisked together I coated two chicken breasts in the dressing and let them sit in the fridge for a couple of hours.  I stabbed the chicken with a fork and then just flipped them over a couple of times. 


I air fried them at 380 degrees for 10 minutes, then flipped them over and did another 10 minutes making sure they were 165 degrees inside.


I sliced the chicken up and served it over basmati rice with Feta cheese, sliced Persian cucumbers, chopped cherry tomatoes, tzatziki sauce and some hummus.  


Dave doesn't love Feta so he skipped that and did extra tzatziki and hummus and it would have been delicious with some sliced purple onion which I didn't have.  If you love olives you could easily add some of those in as well but none of us love olives so we skipped out on those. 

I hope you take this idea and run with it and enjoy it as much as we have!

  1. We make this at home too but we do yellow rice instead of white rice for some extra flavor.
