Summer Salad

I love a lunch salad BUT sometimes I find myself starving again if it doesn't have enough protein in it.  This salad keeps me full and is SO TASTY!  




I start off with iceberg lettuce and chop it with these scissors that my friend Lori gave all of us at a Favorite Things party.  THEY'RE THE BEST!!!


Next, I add a scoop or so of drained and rinsed canned chickpeas, diced tomatoes, chopped salami, shredded rotisserie chicken (I like to warm this first), a couple of pieces of chopped bacon and some shaved parmesan. I toss it all together with some Italian dressing and maybe a squeeze of lemon and voila!





Does it make a mess, sure.  Is it worth it?  Also sure.
