Chicken and Rice Casserole

This recipe could not be simpler and while it's not lighting the world on fire with flavor if you're like me and running around like a chicken with your head cut off this week - hot and easy may trump gourmet at this point ;)



What You'll Need...
- 4 chicken breasts
- 1 cup long grain white rice uncooked (I use basmati)
- 1 1/2 cups water
- 1 package onion soup mix
- 1 10 ounce can cream of mushroom soup

What You'll Do...
Step 1) Preheat the oven to 325
Step 2) Spray a 9x13 pan with cooking spray, add the chicken breasts and season them with salt and pepper.
Step 3) Pour the uncooked rice over the chicken and sprinkle with the onion soup mix
Step 4) Combine the mushroom soup and 1 1/2 cups water and pour over the chicken
Step 5) Cover and bake for 1 hour and 15 minutes






I really wish I'd gotten a picture of it plated because it looks kind of bizarre in the baking dish but the chicken was tender and the rice was perfect and everyone in my family ate it.  Like I said, it's not going to win any big flavor contests BUT it couldn't have been easier to prep and I think is a great one to have in your back pocket.
