There's not a whole lot I love more than a one pot pasta meal - and I ADORE broccoli so this recipe was a no brainer I was dying to try. Full disclosure - my kids did not like it but they don't love broccoli or sun dried tomatoes so I was expecting it AND it meant more leftovers for my lunches so it turns out it was for the best. I loved that it wasn't super "heavy" which made it great to take to school and I have making another pot on my to-do-list for this weekend.
Here's What You'll Need...
- 1 lb mild Italian sausage, casing removed
- 3 cloves chopped garlic
- 1 lb bowtie pasta
- 3 cups chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 4 cups small broccoli florets
- 1/2 cup sun dried tomatoes, drained of oil and chopped
- 1/3 cup heavy cream
- 1/2 cup grated parmesan (plus more for serving)
- juice from 1 lemon
Here's What You'll Do
Step 1- Heat up some olive oil in a large pot. Cook the sausage and remove it to a plate for later. Drain off some of the fat.
Step 2 - Reduce the heat to medium, add the garlic and cook for a minute or so.
Step 3 - Add the pasta (uncooked), broth, 2 cups of water, oregano, salt and pepper and bring it to a simmer (I didn't measure any of the spices - just kind of shook some in there). Reduce the heat to medium or medium low and keep it simmering for 5 minutes. Stir it occasionally to keep it from sticking.
Step 4 - Stir in the broccoli (I also didn't measure this, I just used the entire bunch), cover the pot and let it cook until the broccoli and pasta are tender.
Step 5 - Uncover the pot, add the tomatoes, heavy cream and sausage from earlier. Cook until heated through about 1 minute.
Step 6 - remove from the heat and stir in the parmesan cheese and lemon juice. Serve it topped with a bit more parmesan cheese.
This was SO YUMMY and seriously so simple Love that it was one pot and that I didn't have to cook the pasta beforehand. Super simple and delish!
