4 Ingredient Breakfast Muffins

I shared a pic of these super simple breakfast "muffins" on my "day in the life" post yesterday and thought I'd share since they couldn't be easier and are literally 4 ingredients.  My kids aren't huge on breakfast but if there's something warm and sausage-based they're going to grab one on the way out of the door ;)

All you'll need is...
- 1 lb of breakfast sausage, browned and drained
- 1 cup of bisquick
- 1 cup of shredded cheese (plus a little extra)
- 4 eggs

Step 1 - Preheat your oven to 350 and spray a 12-well muffin pan with baking spray

Step 2 - Beat your eggs and then mix in the bisquick, cheese and cooked sausage.

Step 3 - Fill the 12 muffin wells evenly, top with a little extra cheese and bake for between 15 and 18 minutes.  THE END.

These really couldn't be simpler and while they're not going to win any "big flavor" competitions they're definitely hearty, definitely easy and my kids aren't complaining ;)

I prepped these on Sunday and stored them in a ziplock in the fridge and my kids have been warming them up in the microwave and loving them.  HAPPY Wednesday and happy baking!

  1. Oh my gosh! I make this in casserole form quite often but I've never thought about it in muffin form!! Such a GREAT idea!
