We had these burritos a couple of weeks ago and they were SO GOOD! Quick, simple and mixes things up from a typical "taco Tuesday" kind of a thing.
What You'll Need...
- ground beef
- taco seasoning
- refried beans
- shredded cheese
- mexican rice
- burrito size tortillas
What You'll Do...
Step 1) Prep your taco meat like "normal"... brown the meat, drain, add in the seasoning and water, simmer, etc.
Step 2) head up your refried beans in a small pan
Step 3) Warm your tortillas in the microwave or oven
Step 4) Put a layer of beans on each tortilla kind of "off center". Then top with meat, rice (I had leftover taco meat and mexican rice from a previous meal so I incorporated that into these burritos), cheese, etc.
Step 5) Roll up your burritos and then place them into a pan of heated canola oil. They'll only take 30 seconds or so on each side to get nice and brown and crispy.
I sliced these all in half and then served them with guacamole and sour cream. These would be easy to customize and were a BIG hit with my family.
They'd make a PERFECT easy "football watching" meal or a weeknight dinner in between activities. If you're looking for something quick and easy and if you make them I'd love to hear what you think!
