Summer Strawberry Crisp

 I feel like it's been forever since I've shared a new recipe because the end of the school year is just so dang busy so I'm EXTRA excited to share this strawberry crisp recipe I tried out this weekend.  You guys... this was SO easy, is crazy delicious and is going to be perfect for all of your Memorial Day celebrations.





What You'll Need...
- 5 cups of quartered strawberries (you could easily do 6... I just used a 2 lb container)
- 1/4 cup + 2/3 cup white sugar
- 1 teaspoon vanila extract
- 3 tablespoons cornstarch
- 1 cup flour
- 3/4 cup old fashioned oats
- 2/3 cup packed brown sugar
- 1/2 teaspoon salt
- 3/4 teaspoon cinnamon
- 1 stick melted butter

What You'll Do...
Step 1 - Preheat the oven to 350 degrees.  Spray your baking dish with cooking spray and set aside.

Step 2 - Combine the chopped strawberries and 1/4 cup sugar in a large bowl,  Mix together and let the strawberries absorb the sugar.  Add in the cornstarch and vanilla extract and stir until the strawberries are all coated.  Pour them into your baking dish.

Step 3 - In another bowl, combine the flour, oats, brown sugar, 2/3 cup white sugar, salt and cinnamon.  Pour in the melted butter and stir until crumbly (I ended up using my hands to kind of get it all crumbled).  Sprinkle the crumb mixture over the strawberries.

Step 4 - Bake for 35 minutes - the fruit should be bubbly and the topping should be golden brown.  Let it cool a bit before serving.  







I have a strawberry pie recipe that I love and have been loyal to for YEARS but this may have usurped it it's that good.  

Serve it alone or with a big ol' scoop of vanilla ice cream and ENJOY!!!

  2. So many of your recipes have become favorites in my family. Do you always add them to your recipe tab? Some I honestly remember the date you post and find them that way. ;)

  3. I made this for a family event this weekend, and got rave reviews! I used a bag of frozen triple berry mix, and added extra strawberries. This will be my take-along summer dessert for gatherings now, thank you so much!
