Potato Sausage Soup

My mom is the queen of just making up soups.  She'll just start throwing things in the pot and by the time she's done it's some delicious concoction.  I feel like I made her proud when I started making soup from a recipe, quickly realized it wasn't going to work as stated, winged it and made something AWESOME!



I really wish the photo did it justice but it for sure doesn't - you'll just have to trust me that it's SO GOOD!

Here's What You'll Need...
- 1 package (12 oz or more) smoked sausage
- 7 medium potatoes, peeled and cubed
- 2 cups (1 package) frozen corn
- 1 box reduced sodium chicken broth (4 cups)
- 2 ribs celery, sliced
- 2 carrots, peeled and sliced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups whole milk
- 1 1/2 cups shredded cheddar cheese
- fresh parsley

** all measurements are approximate... add more/less of what you like/don't like!**

Here's What You'll Do...

Step 1 - Dice your sausage, get an inch or so of water boiling and then add in your sausage.  Cook for 10 minutes or so.  Drain additional liquid and set sausage aside.  

Step 2 - In the same pot combine the potatoes, corn, broth, celery, carrots and seasonings and bring to a boil.  Cook for about 15 mins or until the potatoes/carrots are fork tender.  Add in the milk, cheese, parsley and sausage - stir and cook on low heat until the cheese is melted and everything is heated through

Here's the deal - love carrots?  Add twice as many.  Want it thicker?  Add less broth.  Hate celery? Skip it!  This was hearty and delicious and a crowd pleaser at my house.

  1. I made a similar soup last night - winging it, too! I used coconut milk as a dairy alternative, and it actually was a delicious flavor. (The 3/4 stick of butter I added didn't hurt either- ha!) It is back in the 20's here this week, so soup was a hit!
