Skate Town Cake ;)

Last week we were talking about birthday party locations and I brought up Skate Town which was THE PLACE to have your party when I lived in Raleigh.  My kids were cracking up when I brought up the limbo competitions, screaming GHOSTBUSTERS at the top of your lungs, being super sweaty from skating and then bathrooms that only had half walls between the stalls.  We were talking about this when I brought up the yellow cupcakes with chocolate frosting that were at every single party and it started a major craving for me and thus started the hunt for  a great yellow cake with chocolate buttercream frosting recipe.  Spoiler alert - I found one and my kids have dubbed it "Skate Town Cake" ;) hahaha




Here's What You'll Need...

For the Cake
- 2 1/4 cups cake flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter; room temperature
- 1 3/4 cups granulated sugar
- 4 large egg tolks
- 2 teaspoons vanilla extract
- 1 cup buttermilk. room temperature
- 2 large egg whites
- 1/8 teaspoon cream of tartar

For the Chocolate Buttercream
- 1 1/2 sticks unsalted butter
- 4 cups powdered sugar
- 2/3 cups unsweetened cocoa powder
- heavy cream
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract

Step 1 - Preheat the oven to 350 degrees.  Grease two 9" cake pans, line with parchment paper, then grease the parchment paper (I used Baker's Joy)

Step 2 - Whisk the cake flour, baking powder, baking soda and salt together in a large bowl and set aside.

Step 3 - Beat the butter and sugar together on high speed for 3 minutes.  The creamed butter and sugar will be extra creamy.  Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed.  Turn the mixer down to medium-high and beat in the 4 egg yolks one at a time.  Beat in the vanilla extract until combined.

Step 4 - Add about 1/3 of the dry ingredients and 1/2 of the buttermilk and beat on low speed until combined.  Add 1/3 more of the dry ingredients and then the rest of the buttermilk and then the last 1/3 of the dry ingredients.  Beat on low until it's combined.  The batter will be THICK!!!  Make sure you scrape the bottom of the howl and continue to mix if necessary.

Step 5 - Using a handheld mixer (or your whisk attachment on your stand mixer), beat the egg whites and cream of tartar together on high speed until fluffy peaks form (about 3 minutes).  Slowly and gently fold the egg whites into the cake batter.  Don't over-mix as you don't want to deflate the egg whites.

Step 6 - Spoon the batter evenly into the cake pans

Step 7 - Bake for about 30 minutes of until the cakes are baked through.  After about 18 minutes tent the cakes with aluminum foil to prevent the tops and sides from over browning.  Use a toothpick to test before removing from the oven. 

Step 8 - After allowing the cakes to cool completely make the frosting by beating the butter on medium until creamy.  Add the powdered sugar, cocoa powder, a few splashes of cream, salt and vanilla extract. Beat on low and then increase the speed.  This is where a lot of it is kind of up to your taste... the original recipe buttercream turned out SUPER thick for me so I adjusted the ingredients a bit (to what I have listed).  If your icing is too thick add more cream.  If it's too thin, add more powdered sugar.  

Step 9 - Frost the cake - ADD SPRINKLES - the end ;)

  2. My mom just used boxed cake but prided herself on mounding the icing on the cupcakes (she would make a double batch of that!). Our Saturdays were spent at Ohio Skate in Toledo, OH. Great memories 😊

  4. I mean can't you just close your eyes and see the neon graphic carpets on the floor and carpeted walls...brown skates with orange wheels...hahahahha.....

  7. Oh how fun! We had a place called Great Skates up here and I swear I grew up in it... we had birthday parties there, a weekly after school field trip, went "just because" on the weekends and yep, always seemed like it was a vanilla with chocolate cake (but I didn't eat cake as a kid-- I know I'm weird like that!).
