I've been trying my hardest to make better salads at home... I LOVE a good salad, but don't love making them myself. hahaha. I have been LOVING this honeycrisp salad though and have been eating it as a side and as a meal with grilled chicken. The dressing is simple to put together and then I just keep the components on hand. Easy!
Here's What You'll Need...
- 1/2 cup extra-virgin olive oil
- 1/4 cup apple cider vinegar
- 1/4 apple juice
- 3 tablespoons honey
- 1 tablespoon lemon juice
- salt, pepper to taste
- spring mix
- honeycrisp apples
- pecans
- dried cranberries
- feta crumbles
Combine the olive oil, vinegar, apple juice, honey, lemon juice and some salt and freshly cracked pepper and whisk until mixed.
In a large bowl combine the greens, cranberries pecans (I use a mix of candied and regular), apple slices and some feta crumbles and then top with the dressing and toss to combine.
On the days after I make the dressing I'll pull the dressing out of the fridge as I'm getting everything else ready so it can warm a bit and then whisk it again before pouring.
If you love apples you'll LOVE this salad. I've added grilled chicken, pumpkin seeds and goat cheese instead of feta. If you make this (or a version of it!) I'd love to hear what you think! HAPPY Tuesday, friends!!!
My favorite salad is still the pear and apple salad with poppyseed dressing that you posted last year. Unfortunately, only one other person I cook for likes that salad so I only make it once in a while… I think the same will be true for this one, but I’ll try it anyway!
ReplyDeleteInstead of apple juice in the dressing, I use 1/4 cup of Trader Joe's spiced cider and it tastes like fall.
