Butter Cake

When I get overwhelmed or stressed I like to bake - it's the starting and finishing a project thing I think but whatever it is my kids and Dave appreciate it ;)  I've had  this recipe bookmarked for a while ago and was waiting for a non-sports Saturday to give it a try and it was even better than I had anticipated.  The cake was moist and crumbly but the outside had a little bit of a crust and the drizzle you let soak in is SO GOOD! 



What You'll Need for the Cake
- 1 cup butter, softened
- 2 cups sugar
- 4 large eggs, room temperature
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk

What You'll Need for the Sauce
 - 1 cup sugar
- 1/2 cup butter
- 1/4 cup water
- 1 1/2 teaspoon almond extract
- 1 1/2 teaspoon vanilla extract


What You'll Do...

Step 1 - Combine the flour, baking soda, baking powder and salt.  Set aside. 



Step 2 - Cream the butter and sugar until light and fluffy.  Add in the eggs one at a time, beating well after each one.  Beat in the vanilla.  





Step 3 - Add the flour mixture to the creamed mixture alternating with buttermilk, beating well after each addition.



Step 4 - Pour the batter into a greased and floured (or Baker's Joy!) bundt pan and bake it at 350 degrees for 55 minutes or until a toothpick inserted in the center comes out clean.  Cool it for 10 minutes, invert cake onto a wire rack over wax paper.




Step 5 - To make the sauce, combine the sugar, butter and water in a small saucepan.  Cook it over medium heat just until the butter is melted and the sugar is dissolved.  Remove from the heat and stir in the vanilla and almond extracts.

Step 6 - Poke holes in the top of the warm cake (I used a fork) and spoon sauce over the cake.  Let it stand a few minutes and then spoon on more.  Brush sauce onto the sides of the cake.  Repeat it until the majority of the sauce is gone.  It's going to seem like a lot and you're going to worry that it's going to be too sweet - TRUST ME!!!






YOU GUYS!!!  It's SO SO SO GOOD!!!!  It's not super sweet, it's moist and flavorful and EASY!!!
