Life-Changing Baked Beans

Here's the deal - I don't love baked beans. I really don't love any beans. BUT some of my favorite people REALLY love beans and so when we were doing burgers for my parents this weekend I decided to try out this recipe and according to everyone who loves beans they're LIFE-CHANGING!

Here's What You'll Need...
- 8 slices bacon
- 2 medium onion, diced
- 3 large cans (28 oz each) pork and beans
- 3/4 cup barbecue sauce
- 1/2 cup brown sugar
- 1/4 cup apple cider vinegar
- 2 tablespoons Dijon mustard

Here's What You'll Do...
Step 1) In a large skillet or dutch oven cook the bacon just enough to render off the fat.  Throw the diced onion into the bacon fat and cook for a few minutes until they're brown and tender.

I totally forgot about the green pepper that the recipe originally called for - so I 'd say you can take it or leave it.  If you love green pepper you can add in 1/2 a pepper diced to the onion.

Step 2) Toss in the rest of the ingredients (beans, sugar, bbq sauce, mustard and vinegar) and stir to combine.  Heat through and simmer for a few minutes and then pour into a 9x13 and top with the bacon.

Step 3) Bake at 325 degrees (uncovered) for two hours.  The sauce will be thick, the bacon nice and brown and your house will smell SO GOOD!

It came out bubbly and thick and literally everyone RAVED!  It also made a TON so if you're looking for a side to feed a crowd this is the one for you!  With burgers, pulled pork, grilled chicken - perfect for all your summer BBQs!

HAPPY Tuesday, friends!!

  1. Ha! Beans are not my favorites either - especially kidney type beans. I do like a good baked bean once in a while and will perhaps make these on Memorial Day!

  3. I make mine similarly, but what makes me love them is adding in a variety of beans- I use only one can of baked beans, and add limas, black beans, navy beans, and even garbanzo. I think the mixture of size and texture is what makes me finally like baked beans.

  4. We make something similar called Calico beans. Throw in some browned hamburger and diced ham and you have a main dish!
