Pumpkin Sugar Cookies

My plan was to share this recipe next week, but we're supposed to have temperatures in the FIFTIES early next week and I thought you may need a "Fall" treat to whip up over the long weekend.  

I made  these a couple of weeks ago for our Sunday night small group and they were a HIT!  The pumpkin taste is light (the best kind of pumpkin taste in my opinion) and the cream cheese icing puts them over the top.

 


Here's What You'll Need...

- 2 1/4 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon nutmeg
- 1/2 teaspoon kosher salt
- 1 cup butter, softened
- 1 1/4 cup sugar
- 1/2 cup pumpkin puree
- 1 large egg
- 2 teaspoons vanilla extract

1/2 package cream cheese, softened
- 1/8 cup butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract


Here's What You'll Do...

Step 1 - Preheat your oven to 350 degrees.  Whisk together the flour, baking soda, cinnamon, ginger, nutmeg and salt.



Step 2 - In a mixer, beat together the sugar, pumpkin, egg, butter and vanilla.  Add in the dry ingredients until just combined, scrape down the sides of the bowl and refrigerate the dough for at least an hour.




Step 3 - Scoop a tablespoon of cookie dough, form it into a ball and then roll it in sugar.  Place it on a baking sheet and repeat.


Step 4 - Bake 10 minutes and let them cool on a wire rack.

Step 5 - In your stand mixer, beat together the cream cheese and 1/8 cup butter.  Add in the powdered sugar and vanilla extract and beat on high until fluffy.  Spread the icing onto the cookies and sprinkle on some cinnamon.

  7. Used the recipe and it never called for the butter so my cookies did not come out so great. Going to try again tomorrow.
