Ravioli Casserole

I'm lots of things but a meal planner is just not one of them.  I've REALLY tried and I'll do well for a little while but I am definitely more of a "day of" planner when it comes to meals.  That's not typically a big deal, but now that I'm back at work and Dave's schedule is picking up again I have been SO GRATEFUL for Express delivery from Walmart! 




Y'all.  I hopped on my phone at lunch, shopped for what I needed for dinner and set my delivery window for when we would be getting home from school.  That's right, friends... DELIVERY WINDOW!!!  I pulled into the house pretty much right at 4:00 and at 4:13 a lovely delivery driver showed up with all of my essentials.   I MAY NEVER GROCERY SHOP AGAIN!!!


I even managed to remember that we needed laundry and dishwasher detergent and had that delivered as well!


You can sign up for Walmart's Express delivery  HERE and start getting all your essentials delivered in as soon as two hours.  I signed up for the unlimited monthly delivery plan and have already put it to use 3 times in the last two weeks!  Such a life-saver for busy schedules and I can't even begin to think about how incredibly convenient this would have been for me when my kids were younger!  SO WORTH IT to not have to go into the store but still be able to shop not only groceries but other Walmart Essentials as well.

So here's what I got for dinner...
- 2 jars marinara sauce
- 1 lb sausage
- 1 lb ground beef
- 15 oz Ricotta cheese
- Italian blend shredded cheese
- Two 25 oz packages ravioli 
- parsley 


And here's what I did with it...

1) I browned the meat along with some onion and then poured in the two jars of marinara.



2) While the meat was browning I mixed together the ricotta with one egg, some shredded cheese, some grated parmesan cheese and some chopped parsley.



Step 3) I put some sauce in the bottom of a 9x13 baking dish and then put in a layer of frozen ravioli, followed by a layer of the ricotta mixture.  Then another layer of ravioli and finished it with sauce.  Then I covered it with foil and baked it at 400 degrees for about 40 minutes.  There was a bunch so I was actually able to even make a pie plate of casserole as well to freeze and pull out for another night.







Step 4) I topped it with some cheese, popped it back in the oven for another 10 minutes or so and then served the ridiculously cheesy goodness to the kids.  They gobbled it up and requested it for lunch in their thermoses the next day which means it's a keeper!

Ingredients:

  1. We loved baked ravioli. I'll have to try this recipe soon (your recipes are some of our favorite things!). I wish we had had all the curbside/delivery services when my kiddos were little! I use them all now but it would have been SO HELPFUL with little ones at home.

    1. Yes!!! Getting them all out of the car and into a store after work was so much work! I wish I’d had this service then as well! Making the most of it now for sure ;)

  2. Grocery delivery is the best, especially for those of us who aren’t able, or don’t have the time. I can’t speak for Walmart but, I do know that other delivery services pay their shoppers and drivers as independent contractors, and as a result, most don’t get paid anywhere near minimum wage. I’m sure this is not you, but, oftentimes, people that opt for delivery services don’t tip well, if at all. Many delivery services have “shoppers” that do the shopping for you, in addition to delivering which adds fuel costs, plus, wear and tear on their own vehicles. I say all of this to say, please remember to tip your delivery people well...in most cases, they put in much more time and effort than a server at a restaurant that you would tip 20%.
