Peanut Butter Pretzel No-Bake Bars

I'm always on the lookout for easy dessert recipes that are no-bake because it is close to 7,000 degrees here right now and I'll do just about anything to avoid turning on my oven.  Dave LOVES a peanut butter dessert and the sweet/salty combination can't be beat.  

Here's what you'll need...
- 16 oz bag mini pretzels
- 1.5 cups peanut butter
- 1.5 cups butter, melted
- 3 cups powdered sugar
- 1 tablespoon shortening
- 2 cups chocolate chips

Here's what you'll do...
Step 1 - Reserve 1.5 cups of the pretzels (you'll use those to top the bars later) and then pour the rest of the bag into your food processor and pulse until you have fairly fine crumbs. 

Step 2 - Combine the melted butter, peanut butter, powdered sugar and pretzel crumbs and mix until combined.  Then press into a 9x13 dish that's lined with foil.

Step 3 - Put the tablespoon of crisco into a bowl with the chocolate chips.  Melt in the microwave and then pour over the first layer of the bar and top with the remaining pretzels.  Refrigerate for at least an hour and then cut into bars.
note: when you're doing the melting I typically do it in 30-45 second intervals, stirring in between

We store these in an airtight container in the fridge and they are delicious on their own and pretty ridiculous served alongside a scoop of vanilla ice cream.  They're super rich and so you can cut them fairly small which makes it an awesome recipe if you need to make something to feed a crowd.

  4. Your recipes are always my favorites , so I will definitely be trying this one! I love the salty, so I am wondering if you think sprinkling sea salt on top would be good, or too much?

    1. for us the salt from the pretzels on the top (and in the "crust" was plenty but it would be worth experimenting with a bit for sure (maybe sprinkling sea salt on half the pan)
