EASY BBQ Chicken

I'm always in the market for an EASY weeknight dinner and thought I'd share these super simple and EXTRA delicious shredded BBQ chicken sandwiches that everyone in my house loves.




Here's What You'll Need...
- 2.5 to 3 lbs chicken breasts, trimmed
- 1 onion
- 28 oz bottle BBQ sauce (we like Sweet Baby Rays)
- 1 tablespoon paprika
- 1 teaspoon kosher salt
- 1 tablespoon brown sugar
- 1 teaspoon dried oregano
- 1 tablespoon garlic powder
(ignore the onion powder in my pic! OOPS!)


Step 1 - slice the onion and lay it in the bottom of your crock pot


Step 2 - lay the chicken on top of the onion


Step 3 - Combine the spices and sugar and sprinkle them on top of the chicken




Step 4 - Top with the entire bottle of bbq sauce


Step 5 - Cook on low for about 5 hours, take the chicken out, shred it, put the onions in a separate bowl and then return the chicken to the sauce in the crock pot and continue to cook for another 30 minutes or so.



Serve on a bun, inside a tortilla, over a baked potato, etc.  If you like onions you can use those on your sandwich or add some coleslaw if that's your thing.


This couldn't be easier and could EASILY be done with 5 lbs of chicken to feed a crowd or have leftovers.  This is great for school nights, or to pop in on a Saturday morning and have on hand for lunch after morning activities, to put in the crock pot after church on Sunday, etc.
