GIANT cookies

My kids requested cookies the other day and I was happy to oblige since I had been eyeing  this recipe to try.  I loved it for several reasons 1) it was SO EASY  2) I was able to customize one batch to suit everyone's likes and  3) the cookies were DELICIOUS!!!

Here's what you'll need...

- 1 cup cold butter cut into cubes
- 1 cup brown sugar
- 1/2 cup sugar
- 2 eggs
- 3 cups flour
- 1 teaspoon cornstarch
- 3/4 teaspoon baking soda
- 3/4 teaspoon salt
- 2 cups chocolate chips
- 2 cups "other" (chopped nuts, M&Ms, toffee chips, etc.)

Here's What You'll Do...

Step 1) Preheat your oven to 410 degrees

Step 2) Put your cold, chopped, butter into a stand mixer with the sugars.  Mix for 3-5 minute until they're all creamy (this was the first thing I REALLY liked about this recipe... no need to wait for your butter to come to room temp... I don't always know when the cookie making bug will bite so this was perfect!)

Step 3) Add the eggs one at at time, mixing until combined.

Step 4) Stir in the flour, cornstarch, baking soda and salt.  Stir until combined (don't over mix).

Step 5) Stir in 2 cups of chocolate chips

Step 6) Stir in 2 additional cups of add-ins

OKAY - so here's where I think this recipe is super fun and awesome for families.  I took the dough out and split it into two balls.  Then I added 1 cup of additional "add-ins" to each one.  The first half I added 1/2 cup of dark chocolate chunks and 1/2 cup walnuts...

... and the other half I added in 1/2 cup chocolate chunks and 1/2 cup M&Ms

Each of the dough sections made 4 cookies (so 8 cookies total)... so you could even divide the dough into 4 sections, add in 1/2 cup of nuts or toffee bits or whatever to each and do 4 types of cookies (it would make two cookies of each type).  It's totally flexible and would be a fun treat to have them "make their own" before a movie or game night.

Step 7) Make 8 balls out of the dough, place 4 on each cookie sheet and bake for 11 minutes (or until the tops brown)

Y'all.  These are massive.  INSANE!  But SO SO SO GOOD!

Mason's face cracked me up!

I have a feeling that this will be on repeat at our house and I think they'll be so much fun to make for friends since they're a unique spin on regular cookies.

If you make them I'd love to know what you add in and what you think!

Happy  Thursday, friends!!!

  4. These look amazing! I can't wait to make them with my daughter. What kind of baking sheets do you use? Do you use Silpat liners? My cookie sheets are on the fritz :(
