Bacon Chicken Ranch Mac and Cheese

I made  this recipe a couple of weeks ago and Luke has asked for it again repeatedly!  Every member of my family raved about it and everyone asked for leftovers for lunch the next day.  I was afraid it was going to be too "ranchy" but it was the perfect amount of flavor without being too much.  Seriously. So. Good.  



I've said it before but I loooooove Daylight Savings time EXCEPT for when it comes to photographing recipes.  By the time I get home and get dinner made it's too dark for good pics.  BOO!

Here's what you'll need...
- 3 cups dry macaroni noodles
- 3 tablespoons butter
- 2 tablespoons flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup millk
- 1.5 cups shredded cheddar
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded Swiss cheese
- 3/4 cup ranch dressing
- 1 cup chopped, cooked chicken
(Dave grilled chicken and we just chopped it up)

- 1/3 cup bread crumbs
- 2 tablespoons melted butter
- 10 bacon strips, cooked and chopped
- chopped parsley


Here's What You'll Do...

Step 1 - Preheat your oven to 350o.  Cook the macaroni according to the package directions (al dente)

Step 2 - In a sauce pan (or dutch oven) melt the butter over medium heat.  Stir in flour, salt and pepper until smooth and then gradually whisk in the milk.  Bring it to a boil, stirring it constantly.  Cook until it's thickened (about a minute).  Stir in the cheeses until blended and melted and then stir in the dressing.






Step 3 - Add the macaroni and chicken to the sauce, stir it to combine.  Transfer it to a greased 9x13 (or leave it in the dutch oven if that's what you're using).



Step 4 - Toss the bread crumbs with melted butter; sprinkle it over the macaroni and top it with bacon.  Bake it uncovered for 25 - 30 minutes and then sprinkle it with chopped parsley. 





This is on our menu for this week, but this time around I'm going to skip the bread crumb topping and the baking step and just keep it extra creamy.  Or possibly split it into a breadcrumb baked dish and a non-baked... Luke loves breadcrumbs and Mason doesn't.   If you make it I'd love to hear what you think and what your family thought!

  3. To keep it extra creamy add about a cup of cubed velveeta cheese. It will keep your cheese sauce creamy even after baking or freezing or reheating
