Crock Pot Hashbrown Breakfast Casserole

 I signed up to bring a breakfast casserole for a "brunch for lunch" teacher appreciation luncheon and as soon as I hit submit I had the "uh oh" moment of how am I going to bake a casserole in the morning, bring it to school with me and then keep it warm until lunch.  I figured the easiest way would be to use my crock pot and decided to try out  this recipe for dinner the next night to make sure it was a winner before making it for the elementary teachers.

Cue everyone in my family LOVING the recipe and eating it multiple mornings in a row and asking me to make it again as soon as it was gone.  It couldn't have been quicker, is SO GOOD and is a great recipe to have on hand when you're needing to feed people first thing in the morning.







What You'll Need
- 1 dozen eggs
- 1 cup milk
- 2 lbs of frozen hashbrown potatoes (my package was 30 oz... it's fine!) 
- 1 lb breakfast sausage, cooked
- 1/2 cup diced onion
- 3 cups shredded cheddar 
- 1/4 teaspoon dry mustard
- 1 teaspoon salt
- 1/2 teaspoon pepper
- extra salt and pepper


What you'll do
Step 1) Beat your eggs, add in the milk, mustard, salt and pepper and beat one more time.

Step 3) Layer 1/3 of the hashbrowns, 1/3 of the onion, 1/3 of the sausage and 1/3 of the cheese. Sprinkle on a little extra salt and pepper. Repeat two additional times (you should end on cheese).

Step 4) Pour the eggs over the layers, cook on low for 8 hours (the eggs should be set)

  6. I found this recipe several years ago on Pinterest and it has become one of our go to's for breakfast on Christmas morning. I always put it in the crockpot before we go to bed on Christmas Eve and when we wake up it is ready to go. I usually turn it off and just leave the lid on until we are ready to eat and it is perfect. Every year some one asks me for the recipe.

  7. Delicious! I may cut it in half, or I will freeze some individual servings since it's only my husband and me now, but I can't wait to try it. He loves breakfast food, and we just decided to make one night of the week breakfast for dinner...You know..."Brinner!"

  8. My teens are always asking/begging for easy heat up breakfasts and this looks like it would fit their request perfectly! I don't always have myself together enough to provide said hot breakfast but I can't wait to try this! Thanks for another easy recipe!
