Blondies

My kids LOOOOVE the blondie mix from Trader Joe's and I've been on the hunt for a homemade recipe that's comparable.  I'm yet to find one that's as "cakey" and yet chewy as Trader Joe's BUT nobody has objected to me trying and I've come across a couple of REALLY good recipes.  The  recipe I'm sharing today is amazingly easy, chocked FULL of chocolate and these pair SO WELL with some sea salt sprinkled on top and served with a big scoop of vanilla ice cream.  




The original recipe calls for molasses - but if you're not a fan of that flavor you can totally leave them out - this is how my kids prefer these.  So here we go...

Here's What You'll Need...
- 1 stick unsalted butter
- 1 cup dark brown sugar
- 1 egg plus 1 egg yolk
- 1 tablespoon molasses (optional)
- 1/8 teaspoon salt
- 1/2 cup all-purpose flour
- 1/2 cup bread flour
- 6 oz semisweet chocolate, chopped
- sea salt
- vanilla ice cream, preferably Blue Bell ;)


Here's What You'll Do...

Step 1) Mix together the melted butter, brown sugar, egg, egg yolk and molasses (optional!) together with a rubber spatula





Step 2) Mix in the flours and salt.  Add in 4 oz of the chopped chocolate.






Step 3)  Pour the batter into a parchment-lined 8x8 baking dish.  Top with the last 2 oz of chopped chocolate, pressing the pieces gently into the batter.  Bake at 350 degrees for 25 - 30 mins.  These will be gooey when they come out of the oven, so just give them a chance to set up and cool before you try cutting them.



OH MY WORD!!! These are SO rich and chocolatey and FULL of flavor.  They're a little "too much" for me on their own but are PERFECTION paired with ice cream.  


If you have a chocolate lover on your hands give these a try and I think they'd be so easy to modify with butterscotch chips, chopped up candy bars of your choice (think SNICKERS!!!) or even top with chopped nuts.  A super basic, easy recipe that is a great one to have on hand.
