Captain Rodney's Dip

Happy Monday, Friends!!!

Erika and I missed last week's link-up in the hustle and bustle of a busy Halloween... but today we're linking up and talking recipes!

Today I'm sharing "Captain Rodney's Dip".  A sweet friend Caitlin brought this to a girls night YEARS ago and over the years we all beg her to bring it to any and all events.  The "secret ingredient" is a pepper glaze that she buys in Mississippi called Captain Rodney's.  She gave me a bottle as a hostess gift and I broke it out to make my own dip last night for Mason's end-of-season soccer party.  



Y'all.  This dip looks weird.  The ingredients sound super strange and it contains about a billion calories... but it is SOOOOO good!!! Trust me!!!  Make this for a Christmas Eve gathering with family, set it out as a Thanksgiving appetizer or bring it in for your co-workers as a surprise.  I promise you everyone is going to flip out and ask you for the recipe.

Here's What You'll Need...

- Ritz Crackers
- 1 cup shredded cheddar
- 1/2 cup mayonnaise 
- 1 block cream cheese
- 8 slices of cooked bacon, crumbled
- 2 chopped green onions
- 1/2 cup (about 1/2 the bottle) of Captain Rodney's Glaze


So Caitlin says she picks this up in a store on their drive between Dallas and Mississippi.  I haven't had any luck finding it in any local stores around here, but you can find it on amazon HERE.



Step 1 - Mix the cream cheese, cheddar cheese, mayo and 2 green onions together.




Step 2 - Spread the mixture into a pie plate and top with crushed Ritz crackers (not too thick... but enough to cover the top).



Step 3 - Bake it at 350 for about 15 minutes or until the edges start to bubble.  Pull it out, top it with bacon (don't use my pic as a guide... I had a bunch of chopped, cooked bacon and I used too much) and drizzle the 1/2 cup of glaze on top.  Pop it back into the oven for about 10 more minutes and serve warm with additional ritz crackers.



SO GOOD!!!


This is what was left after the soccer party and I'm pretty sure that's only because we ran out of crackers :)  And yes... we stopped on the way home to get more crackers so dave and I could snack while we watched football ;)


Y'all.  Trust me and make this.  Have I steered you wrong in the past?  That's what I thought ;)

And as the recipient of a bottle of the glaze, I can tell you what a great hostess gift it would make as well.  Bring the dip to girls night and a bottle of the glaze as your thank you.  Easy!

  1. We make this a LOT because a lot of my friends and family are from Mississippi (including my hubby!). I get at least 4 dips out of a bottle, and honestly, the secret IMO is to mix the Captain Rodney'a glaze into the dip before baking. Trust me, it makes a world of difference! I also use pre-cooked bacon crumbles (not "bacon bits" actual bacon pieces- I get a big bag at BJs warehouse store). 'Makes it even easier to pull together. It's great with tortilla chips. YUM!

  9. Ohhhh that looks fantastic! The glaze reminds me of the Frank's RedHot Sweet Chili sauce we get for chicken when we throw it on the grill. Delicious!

  13. we make this dip with red pepper jelly from kroger or publix and its so good! this dip is the best ever! ill have to order some captain rodneys to see if its any different! this is always a hit!

  14. This looks so good! Trader Joe's has a Hot and Sweet Pepper Jelly that is so good! I'm guessing it might be similar to this glaze? It's only $2.50 so might work if you ever run out of Captain Rodney's https://www.amazon.com/Trader-Joes-Sweet-Pepper-Jelly/dp/B009FDJCIY

  20. There is something exactly like this here in Texas. I'm sure you can google it, but there is a store in Tyler called Sweet Gourmet, they have a Sweet Pepper Glaze and the recipe for their dip is JUST like this, except they top it with panko instead of Ritz. YUM! I made it for the first time this past Christmas and have been craving it ever since.
