I'm always on the hunt for easy weeknight meals... things that I can put together pretty quickly after school with items that I typically have on hand. When I came across this recipe for Cheeseburger Pie I knew that the kids would love it and I had everything in the pantry and refrigerator and so I went for it. Everyone at my house loved it so I thought I'd share!
What you'll need...
- 1 lb ground beef (I use 93/7)
- 1 cup milk
- 1 cup shredded cheddar
- 1/2 cup bisquick
- 1 cup chopped onion
- 2 eggs
- a few pinches of salt
Step 1 - Brown the meat with the onion. When it's cooked and drained, mix in a few pinches of salt.
Step 2 - While the meat is cooking, mix together 2 eggs, 1 cup milk and the 1/2 cup Bisquick.
And spray a pie plate with cooking spray.
Step 3 - Pour the meat into the bottom of a pie plate and top with cheese.
Step 4 - Pour the Bisquick mixture over the meat and cheese.
Step 5 - Bake at 400 degrees for 25 minutes. I did 30 minutes and it was a little too brown on top, but still super tasty.
There you have it! Crazy easy and my kids gobbled this up. I served it with carrots, banana slices and yogurt and put a leftover slice in each of the boys lunch boxes for the next day.
So this definitely isn't gourmet ;) or super pretty to look at, but here's my plate after I took the picture...
And this was after I fed the kids their multiple helpings :)
So, if you're looking for a crazy easy dinner (or lunch!) idea, try this one out. I think it would be great with Italian sausage for breakfast as well.

ReplyDeleteWe must have been on the same page...I made BACON cheeseburger meatloaf last night. If you love bacon (I don't trust anyone who doesn't) then I would cook 3-4 slices with the meat or alone if you wanna drain the fat. Yummmmmy!

DeleteWe make a version of this at our house but use breakfast sausage instead of hamburger. It's a yummy little casserole for a brunch or a lazy Saturday morning.

ReplyDeleteI tried this the other night with mixed reviews from my family. It really tastes like a breakfast casserole so I agree Andrea that if you substituted sausage it would be a good brinner.
ReplyDeleteI've made this a number of times since you posted it. It's become a favorite! One thing I like to do is add a little bit of ketchup, mustard, and chopped dill pickles to the bisquick mixture. Makes it taste even more like a cheeseburger! SO good!
