Easy cheesy stuffed shells

This is one of those recipes that is easy to throw together on a school night and one that I know all three of my kids will gobble up excitedly.  It would probably be even better with homemade sauce, but jarred does the trick in a pinch (I like to throw in some basil, oregano and/or thyme and sometimes a pinch or two of sugar)



- 2 cups mozzarella cheese (you won't need the whole bag)
- Big tub of ricotta cheese (I used low fat)
- 2 eggs
- Fresh parsley
- Grated parmesan
- Jar of pasta sauce
- Package of jumbo pasta shells


Step 1: Beat the two eggs together


Step 2: Mix in the ricotta cheese, a few handfuls of shredded mozzarella and some grated paremsan.  This is totally up to you... I'll throw in whatever leftover Italian cheese I have in the fridge.


Throw in some chopped parsley, salt and pepper and mix it all together.



Step 3: Put a little bit of sauce into the bottom of a 9x13.  Then use a spoon to stuff the shells (which you've already cooked, drained and cooled).




Step 4: Cover the stuffed shells with the remaining sauce.


Step 5: Cover with foil and bake at 350 degrees for 30 minutes.


Step 6: After the 30 minutes, throw some cheese on top and bake about 15 more minutes or until it's melted and fabulous.


Yes, ma'am!!!


I served these with some sliced, baked Italian sausage, garlic bread and a salad.  PERFECTION and easy!

I've made these before and added meat to the sauce, which was delicious as well.  You really can't mess them up.

  7. I make something similar...tip...scoop the cheese mixture into a ziplock and seal. Snip the corner and then pipe the filling into the shells. Quick and less mess. Same with deviled eggs!

    1. Love it! That's what I do when I do manicotti, but for whatever reason these were pretty easy with a spoon... maybe because they're jumbo sized? I also pipe frosting with a ziplock. hahaha

  16. My family loves this meal too! Our version uses a little pesto instead of the fresh parsley, which is helpful if you forget to plan ahead! 😉
