Recipe Club

I screenshotted this recipe for smoked sausage hash brown casserole a while ago and have been looking forward to trying it out.  My boys love smoked sausage and I had high hopes of it being a big hit.  It also included a homemade cream of chicken soup which I've never made before, but ended up being SO easy!


For the cream of chicken soup
1 tablespoon butter
2 tablespoons flour
1 cup water
1 cup whole milk
2 teaspoons chicken bouillon paste
1/2 teaspoon thyme
1/2 teaspoon poultry seasoning
Salt and pepper

For the casserole
1 bag of hash browns, defrosted (32-oz)
14 oz smoked sausage, diced (I use turkey sausage)
1 small onion diced
1 1/2 cups shredded cheddar cheese


I figured I'd give the homemade cream of chicken soup a go and it was actually really easy.  If you decide to use the canned version, add milk to it until you have 2 cups of soup.

First up, I melted the butter over low heat...


 ... and then put in the flour, whisked it together and let it cook for about a minute.


I stirred in the water and stirred it until there were no more lumps and it thickened.


... and then I stirred in the milk, bouillon paste and seasonings.


 I stirred it all together and let it simmer until it thickened a bit. Then I added salt and pepper to taste.

 While the soup simmered a bit, I combined the hash browns, cheese, diced sausage and onion into a crock pot that I'd sprayed down with Pam spray.


I poured the soup on top, stirred it all together and cooked the whole thing on high for 3 hours.


It's not pretty, but it's DELICIOUS!  My kids gobbled it up, Dave had seconds and I took some for lunch the next day.  Hearty and filling for Fall and Winter.

  1. Andrea, a great idea adding smoked sausage. I never would have known you could actually cook with it. My crew likes to eat it sliced with cheese and crackers. This looks like a quick and easy weekday meal. Thanks for hosting another month of recipes.

  7. Wait, do you not use the crock pot liners?? Have you talked about this before? I can't remember... but you need them, especially for cheese dishes! They are amazing, no more scrubbing the crock pot!

    2. I agree Andrea. I understand the marketing - they are convenient. But who wants to cook their food in a plastic bag all day. I don't even want to know how many chemicals get transferred to your food. No thanks.

  13. Potatoes, smoked sausage, cheese...you are talking my language! This is a perfect meal for our cold Ohio winters. Do you think it would turn out just as good if I cook on the low setting?

    1. I do! Just extend the time and you should be good. You just want the potatoes to be soft (but not too soft) and have the sausage heated through.
