Recipe Club: Faux Quiche Edition

Thank you all so much for your kind words on my Teacher Tuesday post yesterday.  Teaching is most definitely my passion and I'm excited to share a bit about that here.  Math is too often regarded as boring, hard and an esoteric endeavor and I love being able to change students' opinions and outlooks about Math through their experiences in my classroom.

I say this every month, but I can't believe it's already the last Wednesday of the month!  This past month has been a crazy one, but I'm ready to find some delicious (and easy!) Fall recipes that  I can put together after school or ahead of time on the weekends.


Today I'm sharing a super basic and versatile recipe that my mom made for us often growing up.  We call it "faux quiche" and it's great because you can throw whatever you have into it to make a tasty meal.

The basic recipe is 1 cup milk, 1 cup flour and 3 eggs and then you can add in whatever you have on hand.  Last night I used mushrooms, diced ham, parsley, cheese, tomato and onion.  




Mix together the three eggs with 1 cup flour and 1 cup milk.


Whisk it all together until everything is blended.


Dice up whatever you're throwing in...


I usually use between 1 and 2 cups of cheese and then whatever else I have in the fridge.  This is a great recipe to get rid of some veggies and other leftovers.  I added in about half an onion, tomato, 4 or 5 fresh mushrooms, handful of parsley, salt and pepper and 8 oz of diced ham.  In the past I've used pepperoni, peppers, etc.


Combine everything together, pour into a greased pie plate (I use PAM spray) and bake at 425 degrees for 30 minutes.


It comes out golden brown and cheesy.  Yes ma'am.





My kids love this with ham, cheese and onion and it's quick and easy on busy weeknights.  I'll usually serve it with a salad, but last night I didn't have lettuce so I ate it with a piece of buttered bread and a big bowl of grapes.  Because that's basically the same thing as a salad :) hahaha

And I'm not even going to lie.... Dave had the boys out fishing with my Dad, Griffin was in bed and I ate my faux quiche and grapes in bed while watching Pitbulls and Parolees. :)  I get sucked in to these shows on Animal Planet and the Discovery Channel and they become some of my favorites (I've watched every season of Deadliest Catch and if one of those "Biggest and Baddest" shows on Animal Planet comes on I've usually seen it.... twice).

  4. I love Deadliest Catch, you should check out Ice Road Truckers as well, similar shows but instead of being fishing at sea the truck drivers are traveling the Ice Roads is northern Canada and Alaska!

  7. That looks so good and sounds so easy. I love these types of recipes that have a base but that you can switch up the add ins. I'm going to have a look in my fridge and see what I can add in. Yum and thanks!

  10. I have to tell you.... I made your famous pulled pork for the first time this week. It was such a hit!!! My kids are picky, picky, picky. Plus, 2 of my 4 have severe food allergies, so dinner is always a struggle. The pulled pork was allergen free for us, so I gave it a shot. Everyone absolutely loved it and requested I make it every night. Haha. I used Pepsi, because that's what I had on hand, but next time I'll use the Dr. Pepper. Love your blog. Have a great week :)

  12. This looks so yummy!! Not surprising cause all your recipes are! Question... Do you think whole wheat flour works and skim milk? Also is it eggy enough with just 3 eggs? Haha if that make sense? Thanks for sharing! LOVE your recipe clubs and the step by step pics!!

  15. I have tried both the crockpot lasagna and the crockpot meatball/noodle recipes you share and absolutely loved them both! They were so easy and tasted fantastic! Will have to give this one a try :) Thanks!

  19. That recipes sounds and looks delicious, despite me not being a huge fan of eggs. Also, Pits and Paroles is one of my guilty pleasures. Although I'm not a fan of pits and probably would never own one myself, I do love the show and what they are doing. Rescuing animals in need and giving parolees a shot at a better/new life, I think it's wonderful!

  20. I also second the question about skim/fat free milk. That's all we use in our home. What kind do you usually use in the quiche?

  23. I know this is an older post but I am making this to take to a new mom tomorrow morning and have made it at least 10 other times and just wanted to say thanks for such a yummy recipe! Everyone I've made it for has loved it. Our favorite combination in our home is sausage crumbles,cheddar cheese, onions and mushrooms!! Thanks again ��
