Happy Friday, Friends!!! I wrapped up a full day of Biblical Integration training yesterday and, well... I'm wiped. This up and at 'em thing is for the birds :)
I haven't been the only one who's been busy this week. Luke has been going to Music Camp at church in the mornings and he's been having so much fun! We have a CD of the songs at home and he's been practicing and it's the cutest thing I think I've ever seen :) His performance is tonight and we can't wait to see him on stage. The church posted the picture below to their facebook page this week and I DIED LAUGHING because I am a total "awkward waver" (my friends can attest to this) and apparently Luke takes after his mom.
In the evenings he's been going to VBS at a church down the street from us and it's been AWESOME! It's been from 6:00 - 9:00 p.m. and he thinks he's hot stuff being out late. :)
Watching my kids get involved in Church activities is our FAVORITE! Dave and I both grew up in church doing all kinds of activities and such and we love seeing our kids get involved as well.
On Tuesday, Griffin woke up early from her nap and the only cure for her crabbiness was one of her FAVORITE activities... pedicures. Or "PAINT TOES!!!" in Griffin speak :) I paint and she dries. #teamwork
After Wednesday's Recipe Club post, several of y'all emailed me amazing sounding crock pot recipes. I happened to be at the grocery store when I got an email from Christina talking about a crockpot lasagna recipe that was so good she made it for Christmas dinner. Um, if it's good enough for Christmas, it's good enough for me! I grabbed a few of the ingredients (most of it I had on hand) and was ready to go!
- 1 jar pasta sauce
- 1 pound Italian Sausage (I used mild for my kids)
- 1 container (15 oz) Ricotta Cheese
- 2 cups shredded mozzarella
- Oven ready lasagna noodles (nine noodles)
- Italian seasoning
- Salt
- 1/2 cup water
- 1 (10 oz) package frozen spinach, thawed and patted dry
While the sausage browns, combine the ricotta, 1 cup of mozzarella and the spinach.
Drain the sausage and mix in the sauce, 1 teaspoon Italian seasoning, 1/2 teaspoon salt and 1/2 cup water.
Spread 1 cup of the sauce in the bottom of your greased crock pot. Layer with three noodles (I broke them apart to fit).
Next put more sauce, 1/2 the cheese mixture and then three more noodles.
Then more sauce, the last 1/2 of the cheese and the last three noodles.
Top with the remaining sauce and 1 cup of mozzarella and cook on low for 3-4 hours or until the noodles are done.
Y'all.... this was SO GOOD!!! It's our new FAVORITE and I couldn't wait for a recipe club post to share.
It is seriously AMAZING!
On Tuesday night I got to hang out with some of my FAVORITE girls! I laughed until my cheeks hurt and treasured every single minute.
All of my kids LOVE pushing the little carts at the grocery store, but seeing their little smiling faces peeking out of the car (while contained!) is my FAVORITE way to shop.
After work yesterday I came home to this Evys Tree wrap on my doorstep and when I stepped out back to snap a picture, this boy followed and was full of bologna :) I didn't get a picture of the hoodie, but I did get these...
His plans were way better :)
I moved the picture taking party inside since it was a million and one degrees outside, which is WAY too hot for a sweatshirt. I say this every time I get a new Evys Tree, but I think this one may be my new FAVORITE ;)
You can wear it open or pin it closed and I think it will be super cute with leggings and boots this winter as well.
I snapped a couple of pictures outside so you could see the colors. The knit shawl collar is really soft and not itchy at all.
And this cute tea cup is my new FAVORITE.
It's fun and colorful and would be a really easy and sweet teacher gift.
The boys were at extended care today while I was in my meetings and I got this text from the Lower School receptionist. His crazy eyes are my FAVORITE ;)
And GG's biggest brother gave her lots of hugs before she got dropped off at Miss Lisa's for the first time.
I picked up this dress on MEGA SALE this week, but now it's sold out. You can find it at the regular price HERE or HERE.
I always keep an eye out for unique dresses that I can wear without a jacket (because HOLY HEAT, BATMAN!) and this one fit the bill.
When it starts to cool off I'll probably pair it with a shrug or sweater and my riding boots...
And with long, flare jeans and these wedges I'll be able to wear it as a tunic top.
The embroidery is to die for.

This weekend we're looking forward to a whole lot of relaxing and a whole lot of Matilda Jane!
