Recipe Club - Dr. Pepper Cake Edition

YAY!  It's Recipe Club Day!  Today I'm sharing one of my VERY favorite recipes EVER!  My first year of teaching, a student made and brought a Dr.Pepper cake to me for my birthday and I was hooked.  I'd never had one before and it was love at first taste. 

It's a really moist chocolate cake with a hint of cinnamon.  It's awesome. 

Here's what you'll need...

For the cake:
1 cup butter
1 cup Dr.Pepper (NOT diet!)
4 tablespoons cocoa
1.5 teaspoons cinnamon
2 cups flour
1 teaspoon baking soda
2 cups sugar
1/2 teaspoon salt
2 eggs (room temp)
1/2 cup buttermilk
2 teaspoon vanilla

For the frosting:
1/2 cup butter
1/4 cup Dr.Pepper
3 tablespoons cocoa
2 cups powdered sugar
1 teaspoon vanilla

First up, combine all the dry ingredients...

Mix them all up and then add in the eggs, buttermilk and vanilla. 

Melt the butter and combine it with the 1 cup of Dr. Pepper and then add that in as well...

This is where I totally failed and forgot to take anymore pictures. :)

Mix it all together, pour it into a 9 x 13 cake pan and bake it at 350 for 35 minutes (or until a toothpick comes out clean).

When the cake is cool, take the room temperature butter and combine it with the powdered sugar and cocoa powder.  Slowly add in the vanilla and Dr. Pepper and beat it on high until it's light and fluffy.  Spread the frosting on enjoy!!!

I've made this as cupcakes as well and piped the icing on using a Ziplock bag... but the sheetcake is just so easy!!!

  5. My grandma used to make a coca cola cake that looks so similar to this recipe! It was delicious (as I'm sure yours is!)

  7. I LOVE LOVE LOVE this cake. And so did my friends! After I made it for one friend's birthday, another friend requested it. The frosting might be the best thing ever! So delicious!
